Chicken Seekh Kebab

Ingredients:

- 500 grams ground chicken
- 1 medium onion, finely chopped
- 2 tablespoons ginger-garlic paste
- 2 green chilies, finely chopped
- 1/4 cup fresh coriander leaves, chopped
- 2 tablespoons roasted gram flour (besan)
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon lemon juice
- Salt to taste
- 2 tablespoons oil (for grilling)
- Lemon wedges and mint leaves (for garnish)

Instructions:

1. In a large mixing bowl, combine ground chicken, chopped onion, ginger-garlic paste, green chilies, coriander leaves, roasted gram flour, red chili powder, garam masala, cumin powder, coriander powder, turmeric powder, lemon juice, and salt. Mix everything together until well combined.
2. Cover the mixture and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
3. Preheat your grill or oven to medium-high heat.
4. Take a small portion of the chicken mixture and shape it into a long cylindrical kebab around a skewer. Repeat with the remaining mixture and skewers.
5. Brush the kebabs with oil on all sides to prevent sticking.
6. Place the kebabs on the preheated grill or oven and cook for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and browned on the outside.
7. Once cooked, remove the kebabs from the grill or oven and let them rest for a few minutes.
8. Serve the Chicken Seekh Kebabs hot, garnished with lemon wedges and mint leaves. You can also serve them with mint chutney, yogurt sauce, or naan bread.
