Instructions:
1. In a bowl, mix together the grated cheese, chopped onions, tomatoes, green chili (if using), coriander leaves, and salt. Set aside.
2. Heat a non-stick dosa tawa or griddle on medium heat. Once hot, spread a ladleful of dosa batter on the tawa in a circular motion, starting from the center and moving outwards. Create a thin layer of batter.
3. Drizzle a teaspoon of ghee or oil around the edges of the dosa and on the surface. Allow it to cook for a minute or until the dosa turns golden brown and crisp.
4. Sprinkle a generous amount of the prepared cheese mixture evenly over the dosa. Make sure it covers the entire surface.
5. Reduce the heat to low and cover the dosa with a lid. This will help the cheese to melt and the flavors to blend.
6. Cook for about 2-3 minutes or until the cheese melts completely.
7. Once the cheese has melted, remove the lid and fold the dosa in half or roll it into a cylinder shape using a spatula.
8. Transfer the cheese dosa to a serving plate and repeat the process with the remaining dosa batter and cheese mixture.
9. Serve the cheese dosa hot with coconut chutney, tomato chutney, or sambar.
