Pav Bhaji


Ingredients:

For the Bhaji:

- 3 large potatoes, boiled and mashed
- 1 cup mixed vegetables (e.g., peas, carrots, bell peppers), boiled and mashed
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1/2 cup cauliflower, boiled and mashed
- 1/2 cup green bell pepper (capsicum), finely chopped
- 1/2 cup boiled and mashed green peas
- 4 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2-3 green chilies, finely chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1 tablespoon pav bhaji masala
- Salt to taste
- 2-3 tablespoons oil or butter
- Fresh coriander leaves, chopped

For the Pav:

- 8 pav buns
- Butter for toasting

Instructions:

1. Heat oil or butter in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.

2. Add minced garlic, ginger, and chopped green chilies. Sauté for a minute until aromatic.

3. Add chopped onions and sauté until they turn translucent.

4. Add chopped tomatoes and cook until they soften and turn mushy.

5. Add red chili powder, turmeric powder, and pav bhaji masala. Mix well and cook for a couple of minutes.

6. Add boiled and mashed potatoes, mixed vegetables, cauliflower, green peas, and chopped bell peppers. Mix everything together.

7. Use a potato masher or the back of a ladle to mash the vegetables while stirring.

8. Add salt and a little water to achieve the desired consistency. Allow the mixture to simmer for 10-15 minutes, stirring occasionally.

9. Once the vegetables are well-cooked and mashed, taste and adjust the seasoning.

10. Add more pav bhaji masala if desired for extra flavor.

11. Garnish with freshly chopped coriander leaves.

12. For the pav, slice the buns horizontally, but not completely through.

13. Heat a pan and spread butter on the pan. Place the buns cut-side down and toast until they turn golden brown and crispy.

14. Serve the hot bhaji with toasted pav buns, a dollop of butter, and optional garnishes like chopped onions and lemon wedges.

Pav Bhaji is usually enjoyed with a side of chopped onions, lemon wedges, and sometimes even extra butter. It's a flavorful and hearty dish that's perfect for a satisfying meal.
